Mozzarella Heaven in Crown Heights: Barboncino Pizza

Barboncino Pizza in Crown Heights Brooklyn has it all: Neapolitan pizza cooked in a wood-burning stove, great salads, appetizers, desserts, and a full liquor bar- all in a cool, casual setting.

With so many types of ovens on the market today, why did Barboncino opt to use the traditional wood burning stove? "I love all types of pizza and it's possible to make great pies out of any type of oven," says Ron Brown, chef and owner. "While I obviously prefer pizza made in the Neapolitan tradition (at Barboncino, our pizza is fired in a wood burning oven imported from Italy from a company that has been making them for over 100 years), the most important decision along the road to a great pizza is using the highest quality ingredients."

Barboncino's pizza's are crafted with imported Italian flour, salami and hard cheeses- and locally-sourced mozzarella. Brown tells us that he spent three years tweaking and refining his dough recipe: he uses a slow-fermentation process that takes three days to complete. "The result is what we think is a perfect Neapolitan crust- then, when topped with the proper proportions of delicious toppings, you have reached pizza heaven," says Brown.

When it comes to the top three reasons people return to an establishment- food, service, and atmosphere- Ron Brown has it all figured out. "I work carefully with the kitchen to keep our quality top-notch and consistent," Brown explains. "Our staff is chosen because they are people who truly enjoy giving good service, and they all strive to give our guests the kind of service they would want for themselves. And, our ambiance is relaxed, chic and fun, all at the same time!"

It seems patrons would agree- visitors to the eatery have given them a coveted 4.5 out of 5 stars rating on online review sites such as Yelp!, TripAdvisor, and UrbanSpoon. Reviewers have said such things as, "Fantastic Italian style pizzeria. The dessert is a must, the service was superb," and "I can hands down say it was the best specialty pizza I've had in Brooklyn! Overall the ambiance is so chic and very rustic and the service was good, you don't feel rushed at all; thumbs up!"

Ron Brown has gone out of his way to provide a comfortable, accommodating atmosphere for his diners to enjoy his authentic, Italian-style food. "I am so proud when many have told me that Barboncino is their favorite spot and the 'go to' place when they are introducing friends and relatives to their wonderful neighborhood, Crown Heights in Brooklyn," boasts Brown.
